Chimichurri is a sauce that originated in Argentina, made with herbs, garlic, vinegar, oil and spices. It's been a staple of Argentine and Uruguayan cuisine for centuries — believed to have been created in the 19th century by gauchos (Argentine cowboys) as a sauce to accompany their grilled meats (asado). The name “chimichurri” has uncertain origins: some theories trace it to the Basque word “tximitxurri” (meaning “a mix of things”), while others believe it was named after an Irish or English immigrant who created the sauce.
What does chimichurri taste like?
Classic Argentine chimichurri is a vibrant blend of parsley, garlic, oregano, olive oil and vinegar — fresh, zesty and bold. At CHIMMY'S, we make a modern version using dried parsley and coriander instead of fresh herbs. This keeps the oil content (and calories) lower, extends shelf life, and gives a more consistent flavour jar to jar — which is also why our chimichurri has a reddish rather than green colour.
