Easy Mackerel Sandwich with CHIMMY'S Chimichurri

This CHIMMY'S Chimichurri Mackerel Bap combines flaky baked mackerel, creamy avocado and a fresh chimichurri yoghurt dressing in a soft milk bap. Ready in under 20 minutes, it's a healthy, high-protein lunch that's full of fresh flavours and heart-healthy omega-3s.
Ingredients
- 2 fresh mackerel fillets
- 2 milk baps
- 1 ripe avocado, sliced
- 3 tbsp Greek yoghurt
- 2 tbsp CHIMMY'S Chimichurri
- 1 tbsp olive oil, plus extra for drizzling
- Fresh coriander leaves
- Salt, to taste
Method
1. Prepare the Mackerel
Check the mackerel fillets for pin bones and remove them with fish tweezers if possible, or simply trim away the centre line of pin bones before cooking. Place the fillets on a baking tray, drizzle with olive oil and season lightly with salt.
2. Bake the Fish
Preheat the oven to 180°C. Bake the mackerel for 3–5 minutes, depending on the thickness of the fillets. The flesh should be just cooked and still moist.
3. Make the Chimichurri Yoghurt
While the fish is cooking, mix the Greek yoghurt with CHIMMY'S Chimichurri and a drizzle of olive oil until smooth and creamy.
4. Prepare the Baps
Slice the milk baps in half. Arrange half of the sliced avocado over the base of each bap. Top with a warm mackerel fillet before adding a generous spoonful of the chimichurri yoghurt. Finish with fresh coriander leaves and place the top half of the bap on top. Serve immediately.
